Tuna Stuffed Sweet Plantain

This recipe is a great source of protein and healthy fat from the tuna along with other vegetables and proteins.

  1. Preheat the oven to 400°F.

  2. Rub a baking sheet with olive oil.

  3. Boil 4 cups of water and add 1/2 tsp of salt.

  4. Peel the plantains and cut them into about 1" sections. Boil until the plantains are soft enough to mash.

  5. Mash plantains to form a paste-like consistency. Add cornmeal. If the paste is too sticky, add a little more cornmeal.

  6. Add cheddar cheese to the mixture and mix it in until fully combined.

  7. In a pan over medium heat, add olive oil, garlic until brown. Add the rest of the vegetables, tuna, and lime with all of the spices. Remove and let the mixture cool down.

  8. Scoop spoonfuls of the plantain mixture, and spread it in the palm of your hand. Add a small spoonful of the filling and seal the mixture using your hands. Repeat the process until you have all the balls ready for the oven! 

  9. Bake for about 5-6 minutes or until it has some color! Serve and enjoy with homemade sauce!
