Tomato, Herb and Baby Lettuce Salad
Enjoy this quick and easy salad low in calories and high in vitamin C.
Combine extra virgin olive oil, white wine vinegar or lemon juice, shallot, dijon mustard, kosher salt, and ground black pepper in a bowl.
Add cherry tomatoes and green tomato into the bowl and toss gently to coat.
Let it sit for 5 minutes.
Add lettuce and basil; toss gently to combine.
