Strawberry and Honey Crepes
Description
These crepes can be swapped out with any fruit that is available and in season.

In a large bowl, whisk the flour, sugar and salt until combined. Create a well with the flour and add the eggs. Gradually pour in milk, whisking to combine. Let batter stand at room temperature until slightly bubbly on top (approx. 15-20 minutes).

In a skillet over medium heat, melt butter. About 1/4 cup at a time, drop batter evenly onto pan, swirling it to evenly coat.

Cook crepe for 2 minutes, then flip and cook 1 more minute. Repeat with remaining batter.

To make the glaze, place strawberries into a saucepan over low-medium heat and mash until you've reached your desired consistency.
Optional: A 1-3 tsp. cornstarch to thicken the glaze if desired.

Stir in lemon juice, lemon zest, honey, and salt to taste. Drizzle over warm crepes.
