Description

This Persian inspired salad has been turned from a simple side into a full meal with the addition of the pita and cottage cheese (carbs and protein). The ingredients for the filling can be prepped and mixed ahead of time and then added into the pita with the toppings of your choice at any time, so this is a great option for a busy week. It also requires zero cooking and each serving has 23 g of protein.

  1. Dice the tomatoes, cucumbers, and red onion and place in a large bowl.

  1. Chop the cilantro/dill and mint and add to the bowl.

  1. Add the pepper, lemon juice, and olive oil directly to the bowl and mix all of the ingredients together.

  1. Warm up the pita or tortillas in the microwave (about 10-15 seconds), toaster, or stove top so they are slightly warmed. This step is optional.

  1. Fill each pita with the filling, cottage cheese or greek yogurt (about ½ cup in each pita), and avocado. Enjoy!
