Sheet Pan Breakfast
Description
Start your day off with this delicious and simple sheet pan breakfast. Just throw everything onto a sheet pan and enjoy! Sheet pan recipes are great because the clean up is easy and you can modify them to your liking. For this recipe you can add any of your favorite chopped vegetables for extra nutrients. Each serving of this recipe has 9 g of protein, 4 g of fiber and 38% of your daily vitamin C needs!

Preheat oven to 400 degrees F and line a baking sheet with parchment paper or tin foil. If you don’t have either, lightly oil the baking sheet before placing the potatoes on the tray.

Halve the potatoes and chop any additional vegetables, if desired.

Place potatoes (and any other vegetables) in a single layer onto the prepared baking sheet. Add olive oil, parmesan, garlic, and Italian seasoning; season with pepper to taste. Gently toss to combine.
Place into oven and bake for 20-25 minutes or until golden brown and crisp.

Create 4 wells; add eggs, gently cracking the eggs throughout and keeping the yolk intact.
Place into oven and bake until the egg whites have set, an additional 8-12 minutes.

Serve immediately, garnished with parsley if desired.
