Sauteed Bok Choy with Vegetables

  1. Cut white stalks from bok choy; slice into 1 inch pieces. Coarsely chop green leaves.

  2. Cut broccoli florets into bite-size pieces.

  3. In a large skillet, boil 1/2 cup of water. Add bok choy stalks, carrots, and peppers. Cover and simmer over medium-low until vegetables are tender, about 5 - 7 minutes.  

  4. Add bok choy leaves, broccoli florets, green beans, oil, ginger, mushrooms and garlic. Cook, tossing often, until garlic is fragrant, about 3 - 5 minutes. Then stir in soy sauce. 

  5. Serve over brown rice, and garnish with sesame seeds if desired.
