Description

What exactly is a salad? A salad has been determined as a variety of foods that are mixed with dressings. Even though this recipe does not include leafy greens, it is considered a salad because we are adding dressing to the mix of grains and vegetables. Try this delicious recipe rich in protein and fiber.

  1. Heat oven to 425 F oven.

  2. Trim the tough ends of the asparagus. Lay them on a baking sheet and drizzle with 1 tablespoon of olive oil, sprinkle with a pinch of salt and black pepper, and half of the lemon zest. Roast in the oven until just tender, about 20-25 minutes. Cut into bite-size pieces.

  3. Bring a large pot of garlic powdered water to a boil. Add Couscous, and cook until ready. Once it is ready, drain.

  4. Place couscous in a large bowl and toss it with the dressing, grapes, asparagus, feta, almonds, fresh herbs, scallions, and remaining lemon zest. Add lemon juice to your liking and Enjoy!
