Pupusas and Coleslaw
Description
Pupusas are a famous traditional dish from El Salvador! Depending on your stuffing, you can have all of the food groups in a single serving! Depending on your liking, you can make your filling with beans, jalapenos, or even loroco (an edible flower)

For the dough, combine corn flour with warm water. Mix with a spoon until it thickens and proceed to knead with your hands until smooth dough forms. Cover the dough and let it rest for 5 minutes.

To prepare the stuffing, grate the zucchini and mix it with the grated cheese. Mix well and let it rest for a few minutes.

Once dough is ready, grab a small portion and flatten to shape into a disc. Add stuffing and then close into a half moon shape. Seal the ends. Gently pat the dough to flatten and take circular shape. Dip hands into olive oil mixture as needed.

When the pupusa takes form, cook it in a pan over medium heat and turn each side every 4-5 minutes until ready.

Coleslaw
Whisk together water, vinegar, salt, oregano, and pepper in a large bowl. Add cabbage and carrot. toss to combine and coat evenly. Refrigerate for 30 mins
