This delicious recipe can be eaten year-round, and is a creative way to cook with and eat potatoes, a pantry bag staple.

  1. Pre-heat air fryer or oven to 350 F.

  2. Mix the mashed potatoes, onions, flour, egg, salt, pepper, and milk in a medium bowl. Make sure you cooked, mashed, and chilled the potatoes before.

    The mixture should be thick enough to cling to a spoon but sag just a bit when you hold a spoonful up in the air. If it's too thin, add some more flour. If it's too stiff, add some more milk.

  3. Place heaping tablespoons of potatoes in the baking pan and spread them with the back of your spoon.

  4. Cook until golden on each side about 5-10 minutes per side. Serve warm or cool to room temperature and refrigerate for later.
