Kale and Apple Salad

In large serving bowl, add the kale, juice of half a lemon, a drizzle of oil, and salt. Massage until the kale starts to soften and wilt, about 2 to 3 minutes.

For the dressing, in a small bowl, whisk the lemon juice from half a lemon with the honey and lots of freshly ground black pepper. Pour in about 1 Tbsp of the oil while whisking until a dressing forms, and you like how it tastes. It may need more lemon juice and oil.

Pour the dressing over the kale, and add the apple matchsticks and toss to mix thoroughly. Top with the almonds or pepitas and serve.
