Try this simple and quick recipe to make at home. Enjoy as a side dish or as a main course.



  1. Cut the zucchini into small pieces, and cut the corn off the cob.

  2. Coat a non-stick pan or skillet with a tablespoon of oil, and add corn.

  3. Cook for about 10-15 minutes or until corn begins to brown. Remove and add to a bowl.

  4. Add zucchini, cook until light brown on both sides. Remove and add to the bowl.

  5. Cut and remove seeds from bell pepper.

  6. In a large bowl, combine all vegetables, herbs, spices, and dressing.

  7. Serve cold or at room temperature

  8. Optional: Freeze the corn prior to step 3.
