Grilled Corn Salad
Try this simple and quick recipe to make at home. Enjoy as a side dish or as a main course.
Cut the zucchini into small pieces, and cut the corn off the cob.
Coat a non-stick pan or skillet with a tablespoon of oil, and add corn.
Cook for about 10-15 minutes or until corn begins to brown. Remove and add to a bowl.
Add zucchini, cook until light brown on both sides. Remove and add to the bowl.
Cut and remove seeds from bell pepper.
In a large bowl, combine all vegetables, herbs, spices, and dressing.
Serve cold or at room temperature
Optional: Freeze the corn prior to step 3.
