  1. In a large bowl combine the beets, carrots, onion, poblano pepper, and ginger.

  2. In a small bowl combine the lime juice, vegetable oil, mustard, and cilantro.

  3. Pour dressing over slaw and mix well.

  4. Season with salt & pepper to taste.
