Garden Tomato Sauce
Description
This vegetable packed sauce can be used in so many ways- in a vegetable stew, over chicken, with pasta, and even as a dip for raw vegetables. Experiment and see what you find delicious. Store leftovers in the freezer so it is ready at a moment's notice.

In a large skillet over medium heat, cook onion and garlic in olive oil until translucent.

Stir in tomatoes and cook until juice begins to thicken. Stir in salt and pepper to taste.

Reduce heat and simmer 15 minutes, until rich and thick.

Pour half of the sauce into a blender. Keep the other half in the skillet to maintain chunky consistency. Blend half of the sauce until smooth. Pour back into the skillet and stir to combine.

If desired, garnish with cilantro.
