Description

Prepare Beet Purée: Roast or boil beets until tender, then blend with buttermilk until smooth. Adjust buttermilk for desired consistency.
Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper.

Mix Wet Ingredients: In a large bowl, whisk together olive oil, mashed banana, and maple syrup. Add cocoa powder and salt, then mix until smooth. Beat in eggs one at a time, then stir in vanilla extract and beet purée.

Combine Dry Ingredients: In a separate bowl, whisk whole wheat flour and baking powder. Gradually mix into the wet ingredients, then fold in dark chocolate chunks.

Bake & Cool: Pour batter into the prepared pan, spread evenly, and bake for 25-30 minutes. Let cool completely in the pan before cutting into squares
