Description

Soaking fava beans overnight before cooking will improve their digestibility by breaking down complex sugars and compounds, making them easier for the body to process and absorb important nutrients like iron and magnesium.

  1. Soak the dried fava beans overnight, or for at least 8 hours so they soften. Drain and rinse them.

  2. Dice vegetables, gather spices, vegetable stock, and chipotle sauce. Heat olive oil in a large pot, fry green peppers and chipotle sauce briefly, then set aside.

    In the same pot, sauté onions, leeks, carrots, celery, and garlic until fragrant. Add diced tomatoes, cumin, and oregano, cook for a few more minutes.

    Pour in vegetable stock, add fava beans and bay leaf. Bring to a boil, then simmer for 1 hour and 15 minutes until beans are tender.

  3. Blend a portion of the soup and return it to the pot, add spinach and season with salt and pepper.

  4. Serve hot, garnished with cilantro.
