Creamy Mashed Cauliflower
Description
This delicious side is a great alternative to mashed potatoes and helps to incorporate more vegetables to your meal.

Bring a large pot of salted water to a boil. Add the cauliflower and garlic and cook for 10 minutes or until the cauliflower is tender.

Drain, return it to the hot pan, and let stand covered for 2—3 minutes.

Transfer the cauliflower and garlic to a food processor. Add the oil, salt, and pepper and purée until smooth. (You can also use a potato masher or hand blender.)

If desired, garnish with chopped fresh thyme, salt, pepper, and a drizzle of olive oil before serving
