Description

Mole is a sauce that originated in Mexico and is added to several dishes! This recipe is great for special occasions and can be paired with brown rice! This dish is rich in protein and healthy fats!

Ingredients

Instructions

  1. Place chicken in a large pot with 1/4 cup of water. Cover and simmer until tender, about 45 minutes. On a clean cutting board, chop vegetables.

  2. In a medium bowl, mix chili powder, oregano, cocoa, flour (1/2 cup plus 2 tablespoons), pepper, and garlic powder along with 1 cup of water.

     

    Add mixture to chicken in pot; mix well.

  3. Add peanut butter and 5 cups of water to chicken in pot; mix well.

  4. Add carrots, zucchini, and yams. Bring to a boil. Reduce heat to medium. Cook for 10 to 15 minutes. Stir and serve immediately.
