Cheese Dumpling Soup
Description
Prepare this dish at home on a cold rainy day to help you stay warm. This dish is a traditional Honduran dish that includes all of the food groups necessary for a well-balanced meal.

In a medium bowl, add corn flour Parmigiano cheese, eggs, and water. Mix until the dough comes together.

Form little balls between the palms of your hands and flatten them until you get a flat 2-inch dumpling (you can use a measuring tablespoon to make them all the same size).

On medium-low heat, heat the oil and fry the capirotadas until golden brown (almost a minute on each side). Place them on paper towels.

Heat the oil over medium heat. Add onion, garlic, green pepper, coriander, and celery, sauté for a couple of minutes. Add tomatoes and let it cook for another couple of minutes.

Add water or vegetable broth, the corn flour and water mixture, and spices. Let it simmer for 10 minutes. If desired, blend the soup and bring it back to the pot. Add fried capirotadas and simmer for 5 minutes before serving.
