Description
This quick, easy recipe is perfect for a hot summer day. The robust flavors of broccoli, red onion, cranberries, and Greek yogurt are delicious and refreshing! This salad would also be great topped with sliced almonds or walnuts for added protein.

In a large pot, bring water to a boil over high heat.

In a large bowl, combine 4 cups of water and 4 cups of ice to create an ice bath, and set aside.

Add broccoli florets to the boiling water and cook until bright green and crisp-tender, but not too soft, about 2 - 3 minutes.

Immediately transfer the drained broccoli to the ice bath for about 5 minutes or until cool. Drain the broccoli into a colander and shake off any excess water.

In a large bowl, mix together the broccoli, cranberries, sunflower seeds, red onion, and cheddar cheese.
Salad Dressing

In a small bowl, whisk together the Greek yogurt, honey, water, dijon mustard, salt, and pepper.

Drizzle the salad dressing over the broccoli mixture and toss to combine.
