This recipe is a healthy and a convenient option for an on-the-go breakfast. You can also pack an extra for a snack later in the day.



  1. In a large bowl, combine the flour, baking powder, ground cinnamon, and salt. Set aside.

  2. In a medium bowl, whisk together the oil, honey, eggs, yogurt, and vanilla.

  3. Add the wet ingredients to the dry ingredients and stir together until just combined. Fold in the blueberries.

  4. Divide the batter into a muffin pan. Sprinkle with coarse sugar if desired.

  5. Bake at 400° for 18-20 minutes or until a toothpick inserted into the center comes out clean.
