Description

Adding Almonds to banana bread adds to the flavor and nutrition! Almonds are rich in healthy fats and protein! Also, ripe bananas help the bread taste sweet without adding sugar!

  1. Preheat oven to 350 degrees F. Coat a 9-by-5-inch loaf pan with cooking spray.

  2. Stir water and flaxseed meal together in a small bowl. Let stand for a few minutes.

  3. Whisk almond milk, olive oil, vanilla and the flaxseed mixture in a medium bowl. Stir in mashed bananas. Combine flour, baking powder, and cinnamon in a large bowl.

    Combine all ingredients. Add almonds, stirring just to combine; do not overmix. Transfer the batter to the prepared pan.

  4. Bake until golden brown and a toothpick inserted in the center comes out clean, about 1 hour. Cool in the pan for 10 minutes, then turn out onto a wire rack. Let cool for 1 hour before slicing.
