A salad does not always have to consist of only leafy greens to be healthy! By throwing in colorful fruits and vegetables, you are consuming other nutrients that are essential for your health!



Off On

  1. In a large bowl combine the arugula, cucumber, bell pepper, mangos, shallot, corn, and herbs. Season with salt, black pepper, paprika, and cayenne pepper.

  2. Add the lime juice and about 2 tablespoons of olive oil. Toss

    to combine. Taste and adjust seasoning.

  3. Transfer the salad to a serving plate. Sprinkle a bit more pepper to your liking. Serve immediately.
