Spaghetti & Tofu with Tomato Sauce
Description
This simple and delicious pasta recipe is packed with vitamin C and vitamin K. It’s also a great source of carbohydrates and has 4 g of fiber per serving. This recipe can be easily modified by adding your favorite cooked vegetables into the dish or as a side, such as onions, zucchini, spinach, or broccoli.

Drain the cubed tofu, squeezing out any excess liquid using a paper towl or clean dish towel.
Toss the cubed tofu in 1 tbsp of olive oil, 1 clove of minced garlic, and 1 tsp each of dried oregano and dried basil.

In a frying pan on medium heat add the tofu and cook until golden brown on all sides, stirring half way through.

Cook pasta according to package directions. Reserve about 1/2 cup pasta water before draining.

While the pasta cooks, add 1 tbsp of olive oil to a skillet on medium-high heat. Add garlic and sauté until golden brown. Add tomatoes and pepper and reduce heat to medium-low. Sauté about 4-5 minutes.
Once the pasta is drained, add it to the tomatoes and toss well. If the pasta seems too dry, add some of the reserved pasta water.

Add fresh basil, and tofu and toss well. Serve and top with grated cheese if desired and Enjoy.
