Description

Watermelon has a water content of 92% which is perfect when looking for a refreshing snack on a hot summer day. This watermelon gazpacho recipe is the ideal blend of sweet and savory to enjoy during the summer while rehydrating!

Ingredients
  • 1 1/2 cup Watermelon (Cubed)
  • 3 Tomatoes (Roma , halved ,cored)
  • 1 Cucumber (Small, peeled, seeded)
  • 1 Bell pepper (Medium ,cored)
  • 1/2 Onion (Red, small, peeled)
  • 2 clove Garlic (Peeled)
  • 1/3 cup Mint
  • 3 tbsp Olive oil
  • 3 tbsp Apple cider vinegar
  • 1/4 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 cup Ground cumin
Instructions

    Combine all ingredients together in a blender or food processor. Puree for 1 minute, or until the soup reaches your desired consistency. Taste and season with extra salt, pepper, and/or cumin if needed.

    Refrigerate in a sealed container for 4 hours, or until completely chilled.

    Serve cold, topped with your desired garnishes.
