Description

Bake up this recipe to try this tasty bread rich in protein.

Ingredients
  • 2 cup Whole Wheat All-Purpose Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tsp Your Favorite Dried Herbs (ex: oregano, rosemary)
  • 2 Green Onions (diced)
  • 1 cup Cheddar Cheese (shredded)
  • 2 Eggs
  • 1/4 cup Olive Oil
  • 1/2 cup Milk (low fat or fat free)
  • 1 cup Honeynut Squash (shredded)
Instructions

    Using a peeler or a small knife, remove the skin from your squash. Cut the squash in half, and scoop out the pulp and seeds with a spoon.

    Using a box grater, shred the squash and set aside in a colander.

    Combine the dry ingredients (herbs, green onions and cheddar) in a large bowl, and mix well.

    In separate bowl, beat the eggs until they are a consistent, pale yellow color. Then add the oil, milk, and continue to beat the eggs until well combined.

    Squeeze excess moisture out of the shredded squash, add the drained liquid to the egg mixture, and mix well.

    Add liquid ingredients to dry ingredients and stir until just combined.

    Pour batter into greased loaf pan and bake at 350 for 45 minutes or until knife inserted in the center comes out clean.
