Try this delicious, healthy and unique bell pepper recipe as an appetizer to share with family and friends! 

Ingredients
  • 3-4 Bell Peppers (medium)
  • 3 Medium Potatoes
  • 1 Carrot
  • 1/4 cup Green Peas
  • 2 tbsp Oil
  • 2 clove Garlic
  • 1 Onion (sliced)
  • Red Chili Powder (to taste)
  • Cumin (to taste)
  • Coriander (to taste)
Instructions

    Steam potatoes, carrots and peas until fork tender, without making them mushy.

    Chop off the bell pepper tops and set aside. Deseed them as well.

    Heat 1 tbsp oil in a pan, add garlic and cumin and cook for 30 seconds. Then add onions and saute until golden.

    Add chili powder, coriander, salt, pepper and spices you like.

    Next add the steamed veggies and mash them together. Mix until well blended.

    Stuff the bell peppers with potato mixture.

    To bake them, preheat the oven at 350F and bake for 8 - 15 min depending on pepper size.

    Serve with a side of salad or as an appetizer.
