This soup packed with fiber and protein is made with kohlrabi bulbs and leaves, potatoes and white beans, perfect for a cold day.
Cut kohlrabi leaves from the stem and finely chop. Peel kohlrabi bulbs and cube.
Heat olive oil in a large pot and add onion, garlic, carrots, and celery.
Cook for a few minutes until onions are translucent, stirring often.
Add the cubed kohlrabi and vegetable stock, bring to a boil, lower heat and simmer for 10 minutes.
Add potatoes and spices and cook for another 20-25 minutes until kohlrabi and potatoes are tender.
Drain and rinse beans. Add beans, chopped kohlrabi leaves and white wine vinegar (or lemon juice) to pot and cook for a few minutes until kohlrabi leaves are tender.
Remove from heat and top with fresh parsley.
