Potato, Kohlrabi & White Bean Soup

Description

This soup  packed with fiber and protein is made with kohlrabi bulbs and leaves, potatoes and white beans, perfect for a cold day. 

Ingredients
  • 1 tablespoon Olive Oil
  • 1 Onion (medium, diced)
  • 4 cloves Garlic (crushed)
  • 3 Carrots (cubed)
  • 2 Stalks Celery (diced)
  • 3 Kohlrabi Bulbs (peeled and cubed)
  • 8 cups Vegetable Stock (low sodium)
  • 5-6 Red Potatoes (small, cubed)
  • 1 teaspoon Red Pepper Flakes (crushed)
  • 2 teaspoons Thyme (dried)
  • 2 Each Bay Leaves
  • 1 tablespoon Basil (dried)
  • 1 tablespoon White Wine Vinegar (or lemon juice)
  • 2 cans White Beans (or 3-4 cups cooked beans)
  • Fresh Parsley (optional)
Instructions
  1. Cut kohlrabi leaves from the stem and finely chop. Peel kohlrabi bulbs and cube.

  2. Heat olive oil in a large pot and add onion, garlic, carrots, and celery.

  3. Cook for a few minutes until onions are translucent, stirring often.

  4. Add the cubed kohlrabi and vegetable stock, bring to a boil, lower heat and simmer for 10 minutes.

  5. Add potatoes and spices and cook for another 20-25 minutes until kohlrabi and potatoes are tender.

  6. Drain and rinse beans. Add beans, chopped kohlrabi leaves and white wine vinegar (or lemon juice) to pot and cook for a few minutes until kohlrabi leaves are tender.

  7. Remove from heat and top with fresh parsley.
