Description

This delicious recipe can be eaten year-round, and is a creative way to cook with and eat potatoes, a pantry bag staple.

Ingredients
  • 2 Potato (mashed, chilled and well-seasoned)
  • 6 tbsp Scallion (finely chopped)
  • 2/3 cup All Purpose Flour
  • 3 tbsp Milk (low-fat)
  • 5 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper (ground)
  • 1 Egg
Instructions
  1. 1

Pre-heat air fryer or oven to 350 F.

  2. 2

Mix the mashed potatoes, onions, flour, egg, salt, pepper, and milk in a medium bowl. Make sure you cooked, mashed, and chilled the potatoes before.

The mixture should be thick enough to cling to a spoon but sag just a bit when you hold a spoonful up in the air. If it's too thin, add some more flour. If it's too stiff, add some more milk.

  3. 3

Place heaping tablespoons of potatoes in the baking pan and spread them with the back of your spoon.

  4. 4

Cook until golden on each side about 5-10 minutes per side. Serve warm or cool to room temperature and refrigerate for later.
