Description

Adirondack blue potatoes are rich in antioxidants and fiber! Even though it has a bright color, it has a similar taste to the yukon gold potatoes that are used for mashed potatoes. This recipe is great to consume more nutrients without changing the flavor of a traditional mashed potatoes dish! 

Ingredients
  • 2 lb Adirondack blue Potatoes
  • 1/2 cup Olive Oil
  • 1/2 cup Almond Milk
  • 1/2 tsp Garlic Powder
  • Salt (to taste)
  • Black Pepper (to taste)
  • Chives (to taste)
Instructions

    Add the sliced potatoes to a large stockpot. Add in enough cold water to cover the potatoes, then bring the water to a boil.

    Reduce the heat slightly and simmer for about 15 minutes, or until the potatoes are tender. Drain the potatoes and return to the pot.

    With the pot set on the warm burner (with the heat turned off), add in the salt, the olive oil, almond milk, pepper and garlic powder.

    Use a potato masher to mash the potatoes until smooth and creamy, adding in additional milk as needed to reach your desired level of creaminess

    Taste and season with additional salt / pepper as needed, then transfer the potatoes to a serving dish. Top with some fresh chives.
