Description

This simple slaw is delicious and color, using kohlrabi, other vegetables, and golden raisins for an added antioxidant and protein boost.

Ingredients
  • 1 Kohlrabi (large, peeled, grated)
  • 1/4 Purple Cabbage (shredded)
  • 2 Carrots (medium, peeled and grated)
  • 1/2 Red Onion (grated)
  • 4 tbsp Cilantro (chopped)
  • 1/4 cup Golden Raisins (optional)
  • 1/4 cup Greek Yogurt (plain, low fat)
  • 1 tbsp Cider Vinegar
  • 1 tbsp Sugar
  • 1 tsp Salt
Instructions

    Combine the kohlrabi, cabbage, carrots, onion, cilantro, and raisins (if using) in a large bowl.
