In large serving bowl, add the kale, juice of half a lemon, a drizzle of oil, and salt. Massage until the kale starts to soften and wilt, about 2 to 3 minutes.
2 For the dressing, in a small bowl, whisk the lemon juice from half a lemon with the honey and lots of freshly ground black pepper. Pour in about 1 Tbsp of the oil while whisking until a dressing forms, and you like how it tastes. It may need more lemon juice and oil.
3 Pour the dressing over the kale, and add the apple matchsticks and toss to mix thoroughly. Top with the almonds or pepitas and serve.
