Description

Enjoy this low-fat cabbage salad on the side with your favorite protein.

Ingredients
  • 1/2 Cabbage (red or green, about 1 1/2 pounds)
  • 1/2 Red Onion (small, thinly sliced)
  • 1/4 cup Lemon Juice
  • 1/2 cup Parsley Leaves (coarsely chopped)
  • 3 tbsp Red Wine Vinegar
  • 6 tbsp Extra Virgin Olive Oil
  • Salt (to taste)
Instructions

    Cut the cabbage into fourths. Then thinly slice it crosswise and place it in a colander. Season with 2 pinches of salt to help draw out the water, Toss the slices and set aside.

    In a small bowl, toss the sliced onions with the lemon juice and let sit for 20 min

    After 20 min, drain any water that the cabbage has released.

    Place the cabbage in the bowl, add parsley, onion, but not the lemon juice yet.

    Dress the slaw with the olive oil and vinegar, and toss well to combine.

    Taste and adjust by adding lemon juice if you like.
