Description

Corn consists primarily of insoluble fiber, which makes it a low-glycemic index food. This means it is a food that is digested slowly and doesn't cause an unhealthy spike in blood sugar. Corn also contains many B vitamins, as well as essential minerals, including zinc, magnesium, copper, iron, and manganese.

Ingredients
  • 1 cup Corn Meal
  • 1 cup All-Purpose Flour
  • 2 tablespoons Sugar
  • 1 tablespoon Baking Powder
  • 1/4 cup Olive Oil
  • 1 Each Egg
  • 1 cup Non-Fat Milk
  • 1 teaspoon Salt
Instructions
  1.  Preheat the oven to 400 degrees.

  2. n a medium mixing bowl, add the flour, cornmeal, sugar, salt, and baking powder. Whisk to combine well.

  3. In a small mixing bowl, add your oil or butter, milk, and egg and mix well.

    Make a well in the center of your dry ingredients. Add the wet mixture and stir in just until the mixture comes together and there are only a few lumps remainin

  4. Grease a cake pan well. Pour the batter into the prepared pan and bake for 20-25 minutes until the top is a deep golden brown. insert a toothpick into the center comes out clean.

  5. Serve warm or cool to room temperature and refrigerate for later.
