Description

This recipe is perfect for when you are rushed in the morning to prepare a lunch! Not only does it save you time in the mornings but also meets multiple food groups for a well balanced diet!

Ingredients
    Salad Sandwich
  • 2 can Chickpea (1.5 oz each, no-salt and rinsed)
  • 6 tbsp Olive oil
  • 3 tbsp Lemon juice
  • 2 tsp Dijon mustard
  • 1/2 tsp Garlic powder
  • 1/2 cup Celery (Finely chopped)
  • 1/4 cup Dill (Finely chopped)
  • 1/8 tsp Salt
  • 1/8 tsp Ground peper
  • 8 slices Whole-grain bread (Toasted)
  • 4 Lettuce (Leaves)
  • 4 slices Red onion
  • 4 slices Tomato
  • Home-made Mayonnaise
  • 1 cup Olive oil
  • 1/2 cup Soy milk
  • 1 tsp Dijon mustard
  • 2 tsp Lime juice
  • 1/2 tsp Salt
  • 1/2 tsp Garlic powder
Instructions

    Combine chickpeas, oil, lemon juice, mustard and garlic powder in a large bowl. Using a fork or potato masher, crush the chickpeas until most are mashed but some are still whole. Stir in celery, dill, salt and pepper.

    Spread 1 tablespoon of homemade mayonnaise on 1 side of each of 4 slices of bread. Top evenly with lettuce, onion, tomato and chickpea mixture. Top with the remaining 4 slices of bread.

    In a blender, combine all ingredients and blend until smooth. If desired, add more salt
