3 Coat the same skillet with cooking spray and heat over medium heat. Pour in egg mixture and cook until eggs are almost set (approx. 8—10 minutes).
4 Remove from heat. Cover and let stand until eggs are completely set and no visible liquid egg remains (approx. 8—10 minutes). Cut into wedges and serve.
