Broccoli Cheddar Frittata
Break out of the traditional breakfast and try this delicious recipe featuring vegetables, protein, and dairy and enjoy a nutritious, budget-friendly breakfast.
Combine broccoli, carrot, and water in a large nonstick skillet. Cook over medium heat until tender, stirring occasionally to break up broccoli (approx. 10 minutes). Drain.
Beat eggs, milk, mustard, salt, and pepper in a large bowl until blended. Add broccoli mixture, cheese, and green onion and mix well.
Coat the same skillet with cooking spray and heat over medium heat. Pour in egg mixture and cook until eggs are almost set (approx. 8—10 minutes).
Remove from heat. Cover and let stand until eggs are completely set and no visible liquid egg remains (approx. 8—10 minutes). Cut into wedges and serve.
