Description

Black beans and cooked rice are used as the base of these delicious burgers. Flavored with scallions, garlic and spices, these are sure to please the whole family.

Ingredients
  • 1 can Low- Sodium Black Beans
  • 1 Egg
  • 1/2 cup Brown Rice (cooked)
  • 2 Scallions (minced)
  • 2 tbsp Fresh Cilantro or Basil (chopped)
  • 1 clove Garlic (peeled and minced)
  • 1/2 tsp Dried Oregano
  • 1 tsp Oil
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 4 Each Whole Wheat Hamburger Buns
  • Lettuce, Tomato, Condiments (Optional for serving)
Instructions

    In a large bowl, mash the beans with a fork until chunky. Stir in the egg.

    Add precooked rice, scallions, cilantro, garlic, oregano, salt, and pepper. Mix until well combined.

    Divide the mixture into four portions and form four patties about ¾—1 inch thick.

    Heat oil in a large skillet over medium-high heat. Add burgers and cook 4 to 5 minutes on each side until browned and heated throughout.

    Serve on hamburger buns and top with desired condiments.
