Description

Should you buy or make your own pesto at home? Preparing your pesto at home is worth it because it tastes better and fresher! It does not require much besides a food processor and a couple of ingredients! Try making your own basil pesto and pasta noodles for this recipe that is rich in vitamin A and vitamin K.

Ingredients
  • 2 cups Basil (Leaves)
  • 1 ounce Cashews (Toasted)
  • 1 clove Garlic
  • 2 tablespoons Lemon (Juice)
  • 1/4 cup Olive oil
  • 1/4 teaspoon Salt
  • Pepper (Ground)
  • 1 pint Cherry Tomato (Halved)
  • 10 ounces Whole wheat Pasta (Of choice)
  • 1/3 cup Parmesan Cheese (Grated, Optional)
Instructions
  1. Cook pasta in boiling water according to the package.Once cooked, immediately drain the pasta and return it to the pot

  2. In a food processor, combine the cashews, lemon juice, garlic, salt, and pepper and pulse until well chopped.

    Add the basil and pulse until combined. Drizzle in the olive oil and pulse until combined. Add parmesan cheese, if desire to do so. For a smoother pesto add more olive oil.

  3. Add tomatoes and pesto to pasta and toss. Taste and adjust salt and pepper, as needed. Serve with additional parmesan cheese if desired.
