  1. Heat olive oil in a large pot over medium heat

  2. Add garlic, onions, celery and carrots to the pot and cook until softened. Stir and cook for about 5 minutes. 

  3. Add the water, bay leaves, parsley, and thyme. Reduce heat to low and simmer, partially covered, for 45 minutes.

  4. Pour the broth through a strainer into a bowl or pot. Discard solids. 

  5. Once the broth has cooled, store it in an airtight plastic container or freezer bag to place in the freezer. 

  6. Tip: Freeze it in 2-cup portions to make thawing easier.
