Chioggia Beet and Pear Slaw

Using these candy-striped beets, make a colorful and delicious fruit and vegetable slaw that can be added to salads, sandwiches, and more. 



  1. Wash and peel beets.

  2. Shred beets using a box grater or food processor.

  3. Wash and peel carrots.

  4. Shred carrots using a box grater or food processor.

  5. Wash pear and grate using box grater.

  6. Whisk oil, lemon juice, honey, salt and pepper in a large bowl.

  7. Add beets, carrots, pear and scallion. Toss well to coat.
